One of the hottest (pardon the pun) trends in cooking today is induction. Vollrath has been a leader in this technology, introducing an extensive line of countertop and drop-in induction ranges, soup warmers, rethermalizers, fajita heaters, chafers, buffet tables, and more. They also offer an extensive line of induction pots, pans, and other cookware. So, it was with little surprise when I learned from Chef Rich Rupp, Corporate Product Training Manager, that Vollrath has just introduced a countertop Induction Wok Range.

 

Induction cooking is very efficient and eliminates open flames. The gas-like performance and quick temperature response makes induction a great choice for wok cooking. The Vollrath Induction Wok Range features a “turbo button” for immediate fast heat, and Chef Rich tells me that the induction coils wrap up and around the outside of the range’s bowl, providing enough heated surface for great caramelization of vegetables, and searing of meats when stir frying.

 

The Vollrath Induction Wok Range features simple, digital power-level controls, with 100 power settings for ultra-precise cooking. The contour of the cooking surface matches common industry standards, but the wok range also comes with a Vollrath 14” carbon steel wok. The wok is a perfect match for the wok range, but can also be used in other wok applications.

 

The Induction Wok Range is easy to clean, looks great, and has over-heat protection, small-article detection capabilities, a pan auto-detection function, and an empty-pan shut off feature. It is a great addition to any kitchen and provides a simple way to expand menu offerings, or supplement a current wok cooking battery. With no open flame, it is also safe for front of house applications.
